Chaffles… where have you been all my life?! These cheesy waffle-like bites of goodness are absolutely delicious, and a great alternative to a traditional waffle or a piece of bread. They’re SO easy to make, and you better believe I’ll be putting these on rotation weekly. Let me show you how to make a 2 ingredient chaffle!

I first heard about “chaffles” through the Gina Livy program a couple of years ago. (Haven’t heard about the program? You can see what it’s all about here!) She had shared a chaffle recipe that incorporated some seeds and onions, but I wanted to experiment with a plain chaffle first. That’s how this recipe was born! I don’t know if you’d even call it a recipe since it’s SO simple, but I wanted to share it with you nonetheless. You can take this basic recipe and customize it to your heart’s content.

What the heck is a chaffle? It’s a cheese waffle that has a soft, bread-like texture. You might be pleasantly surprised with the texture of these, considering what two ingredients we use! This is a fun alternative to a traditional omelette or a slice of toast, and it’s something the whole family will enjoy eating. This is also a great staple to enjoy if you’re on a keto diet.

  • grated cheddar cheese

…. that’s all you need for basic chaffles! Seriously.

To begin, crack the eggs into a medium bowl. Whisk them until they’re nice and fluffy. Grate the cheese, and then mix it into the beaten eggs.

Close the iron, and let the chaffle cook for about 2 minutes or until it’s golden brown on the edges.

Top with your favourite toppings and enjoy!

Hint: Coat the waffle iron with a little bit of olive oil before you add the egg mixture. It helps revive the chaffles’ crispy texture, and prevents them from sticking to the waffle iron. Alternatively, you could use cooking spray.

Variations

  • Everything Bagel: Add 1/2 teaspoon of Everything Bagel seasoning to the egg & cheese mixture before placing it in the waffle iron.
  • Sweet Chaffles: Add 1 tsp of sugar and 1/2 tsp of cinnamon to the batter before cooking.
  • Mild Chaffle: Substitute the cheddar cheese for mozzarella cheese for a milder flavour. You can also experiment with using a combination of cheeses for a different flavour.

​Equipment

I like to use a mini waffle maker for these for the best results, and to create a snack of the perfect size. My favourite is the Dash Mini Waffle Maker here, and I especially love the heart-shaped one! I can get 6 mini waffles from this 2 egg & 1 cup of cheese recipe. You can use a regular waffle maker if you prefer, but this recipe will only make one large chaffle.

Storage

Store the cooked chaffle in an airtight container in the fridge for up to 5 days. You can also store them in a freezer bag, layering parchment paper in between each chaffle, and place in the freezer for up to 3 months. To reheat, they’re best placed in a toaster oven or an air fryer for about 30 seconds so that they’re crispy.

Top Tip

​Surprisingly, you don’t need a lot of “batter” to fill up your waffle maker. I use about 1 Tbsp of the mixture for each waffle I make in my mini waffle iron.

Serving Ideas

A 2-ingredient chaffle is a delicious breakfast by itself, but you can also use them in all sorts of different ways:

  • create avocado toast by mashing some avocado on top of a chaffle, and adding other toppings like sliced tomato and basil
  • use two chaffles to create a delicious breakfast sandwich – place a fried egg and a slice of ham in between
  • enjoy them like you would a pancake or like regular waffles by drizzling some maple syrup on top
  • use two chaffles as burger buns instead of a regular bun
  • create a pizza chaffle by adding some pizza sauce, pepperoni slices and melted mozzarella cheese on top

  • 2 eggs
  • 1/2 cup cheddar cheese grated

Instructions

  • Warm up the mini waffle iron, and then grate the cheese.

  • In a medium bowl, whisk the eggs. Add in the grated cheese and mix.

  • Pour 1 Tbsp of the egg & cheese mixture into the preheated mini waffle iron.

  • Cook for about 2 minutes or until the chaffle is crispy and golden brown on the edges.

Notes

  • You may want to brush some olive oil on your waffle maker to make the waffles come out easier.
  • You can use the batter to make one extra large chaffle using a traditional, regular sized waffle iron.
