Sliders are a great way to fill the gap and try something decadent at the same time. Much like traditional smash burgers, these patties get their caramelized crust by being cooked on a hot skillet.

However, these tasty burgers are almost bite sized and are served as sliders.

Like regular smashburgers, they are pressed into a piping hot skillet top to get that amazing carmelized crust on the outside of your ground beef.

But in fun sized slider form because.. you know, sliders.

  • 1 sweet onion, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp salted butter
  • salt and pepper to taste
  • 12 slicescheddar cheesecut into quarters

How to Get That Crispy Crust?

When cooking up these bad boys, you want to make every patty equal. I recommend making balls of burger patty meat approximately 1.5oz in size for these sliders (you can use a food scale for better accuracy). If they look oversized in the pan, don’t stress because they’ll be the right size once fully cooked.

If you want to be extra, place two patties ineach burger, add a layer of cheese, and top them with caramelized onions. They’re so delicious you’ll be dreaming of them for days.

The trick is in the skillet to get the perfect crust on your smash burger patties. It’s essential to heat it as hot as you can before you start cooking. I’ve found leaving it to preheat for approximately 10 – 15 minutes.

Fair warning, your kitchen might get a bit smokey if you do this indoors. I’d only try it if you have anoverhead extractor fan. This is why I usually cook my smash burgers outside.

Here’s my smash burger pro tip: preheat your oven, keep it at around 160-170, and store your cooked smash burger patties until all of them are made. This way, your cheese will stay perfectly melty until serving time.

If youhave kidslike me, keep their smash burger sliders simple – meat, cheese, and the bun. You can top each cheesy patty off for the adults with caramelized onions. If you want to be extra fancy, add some pickles and pineapple.

Ingredients

  • 2 1/4 lb ground beef 80/20
  • salt and pepper to taste
  • 1 sweet onions thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp salted butter
  • 12 slices cheddar cheese cut into quarters
  • 12 slider rolls

Instructions

  • Weight out loosely packed balls of ground beef to 1.5oz each. season with salt and place on a baking sheet uncovered in the fridge.

  • Thinly slice onions and place in a pan over medium heat with butter and oil. Let cook until brown and translucent; about 15 minutes; Cook before serving burgers, or place in an oven at the lowest temperature to keep them warm until ready to use.

  • Heat up a griddle on a stovetop or grill on high heat until smoke is coming off. Place 2-4 burgers at a time, smashing with a metal unslotted spatula, carefully sliding the spatula off so that the burger stays pressed to the griddle.

  • Let cook for about 2-3 minutes then firmly scape the patty and flip and add 2 quartered slices of cheese per patty.

  • Once the cheese is nice and melted you're ready to remove from the griddle. Stack once patty on top of another to double up, then place on your slider bun. repeat until all sliders are done.

  • Top with grilled onions and any of your favorite burger toppings and enjoy!

Notes

For the onions – Try using a mandolin to make the process easier.

For the burgers, You may want to put these in a warmer until all your sliders are done so they’re nice and melted when serving – or just serve up immediately to each person!
